This excludes protein-rich pulses such as lentils, kidney beans, chickpeas and soya (we&#8217;re cooking with those tomorrow).<\/p>\n<p>Some examples of healthy veggie ingredients you might have in your storecupboard, larder or pantry might include:<\/p>\n<ul>\n<li>Tinned tomatoes<\/li>\n<li>Tinned sweetcorn or mixed vegetables<\/li>\n<li>Tinned green beans, button mushrooms or carrots<\/li>\n<li>Cans or cartons of vegetable soup<\/li>\n<li>Cans or pouches of vegetable stew or curry<\/li>\n<li>Jars of sweet peppers<\/li>\n<li>Dried onions<\/li>\n<\/ul>\n<p>You might also have some more fancy ingredients if you&#8217;re lucky, like:<\/p>\n<ul>\n<li>Pickled chillies or jalapenos<\/li>\n<li>Jars of aubergine or artichoke<\/li>\n<li>Palm hearts<\/li>\n<li>Dried porcini mushrooms or seaweed\/nori<\/li>\n<li>Olives (yes, technically a fruit but eaten as veg)<\/li>\n<li>Stir fry veg, water chestnuts, baby sweetcorn<\/li>\n<li>Asparagus spears or tips<\/li>\n<li>Creamed spinach<\/li>\n<\/ul>\n<p>Need a few ideas? These are one or two old favourites:<\/p>\n<ul>\n<li>Veggie pizza toppings<\/li>\n<li>Main course salads<\/li>\n<li>Fajita fillings<\/li>\n<li>Stir fries<\/li>\n<li>Pasta sauce or pasta bake<\/li>\n<li>Vegetable chilli or casserole base<\/li>\n<li>Dips with aubergines, olives, chillies or red peppers<\/li>\n<li>Scrambled egg or omelette with veggie filling<\/li>\n<\/ul>\n<p>I don&#8217;t have much by way of veggies in the storecupboard here at the moment, but I did find some tinned chopped tomatoes, sweetcorn in water and an old can of soup.<\/p>\n<p>Tonight I&#8217;m going to drain the sweetcorn and add it to a pan of roasted tomatoes, chillies and sweet peppers that are leftovers from a meal I cooked up yesterday. It&#8217;ll make a tasty fajita filling with some cheese, hot sauce and fresh herbs thrown in, as well as being very colourful and easy.<\/p>\n<p><strong>What have you found in your store cupboard, pantry or larder that you could use today?
