{"id":17861,"date":"2020-04-20T03:30:22","date_gmt":"2020-04-20T02:30:22","guid":{"rendered":"https:\/\/www.pennygolightly.com\/\/?p=17861"},"modified":"2023-05-24T10:47:54","modified_gmt":"2023-05-24T09:47:54","slug":"traybake-monday-date-walnut-oaty-slices","status":"publish","type":"post","link":"https:\/\/www.pennygolightly.com\/traybake-monday-date-walnut-oaty-slices\/","title":{"rendered":"Traybake Monday: Date &#038; walnut oaty slices recipe"},"content":{"rendered":"<p><img decoding=\"async\" class=\"aligncenter size-full wp-image-17867 lazyload\" src=\"data:image\/gif;base64,R0lGODlhAQABAIAAAAAAAP\/\/\/yH5BAEAAAAALAAAAAABAAEAAAIBRAA7\" data-src=\"https:\/\/www.pennygolightly.com\/\/wp-content\/uploads\/2020\/04\/Date-and-walnut-oat-slices-traybake-recipe.jpg\" alt=\"Date and walnut oat slices traybake recipe\" width=\"680\" height=\"450\" \/><noscript><img decoding=\"async\" class=\"aligncenter size-full wp-image-17867 lazyload\" src=\"https:\/\/www.pennygolightly.com\/\/wp-content\/uploads\/2020\/04\/Date-and-walnut-oat-slices-traybake-recipe.jpg\" alt=\"Date and walnut oat slices traybake recipe\" width=\"680\" height=\"450\" srcset=\"https:\/\/www.pennygolightly.com\/wp-content\/uploads\/2020\/04\/Date-and-walnut-oat-slices-traybake-recipe.jpg 680w, https:\/\/www.pennygolightly.com\/wp-content\/uploads\/2020\/04\/Date-and-walnut-oat-slices-traybake-recipe-300x199.jpg 300w\" sizes=\"(max-width: 680px) 100vw, 680px\" \/><\/noscript><\/p>\n<p>This recipe is my own version of a layered traybake inspired by Delia Smith&#8217;s Apricot Oat Slices, and once again it&#8217;s something healthy-ish that&#8217;s easy to throw together whenever you like for snacks during the week.<\/p>\n<p>These start-of-the-week recipes are meant to be quick and unfussy; they don&#8217;t require loads of equipment, and there&#8217;s no need to spend ages trying to make them look pretty either &#8211; unless of course that&#8217;s something you feel like doing to pass the time.<\/p>\n<h1>Date and walnut oaty slices recipe<\/h1>\n<h2>Ingredients<\/h2>\n<ul>\n<li>350g block of dates<\/li>\n<li>100ml water<\/li>\n<li>110g porridge oats<\/li>\n<li>50g walnut pieces<\/li>\n<li>225g plain flour<\/li>\n<li>75g light soft brown sugar<\/li>\n<li>1 teaspoon ground cinnamon<\/li>\n<li>1 teaspoon ground mixed spice<\/li>\n<li>150g margarine<\/li>\n<\/ul>\n<p>It&#8217;s been hard to get a number of ingredients in the shops recently, so I thought I&#8217;d include a few substitutions and workarounds as well:<\/p>\n<p>This recipe is vegan as long as you make it with vegan margarine, but if you don&#8217;t want to use margarine you could also use butter.<\/p>\n<p>The original version is make with dark brown sugar and wholemeal flour, both would work fine here too as long as the sugar&#8217;s fresh and hasn&#8217;t gone clumpy.<\/p>\n<p>No walnuts? Use chopped nuts or a few seeds instead, or omit them altogether. No dates? You can also use finely chopped ready-to-eat apricots, but don&#8217;t add the water.<\/p>\n<h2>Method<\/h2>\n<ol>\n<li>Preheat the oven: standard oven 200\u00b0C, fan oven 180\u00b0C, Gas Mark 6.<\/li>\n<li>Chop the dates and add to the water in a pan and simmer for 5 minutes or so until sticky, then set aside.<\/li>\n<li>Mix the oats, flour, spices, walnut pieces and sugar in a bowl.<\/li>\n<li>Melt the margarine or butter over a low heat, then add to the bowl and mix well to combine.<\/li>\n<li>Press half the oat mixture into a greased or parchment-lined square tin (I used a 22cm one), pushing down well.<\/li>\n<li>Spread the date mixture evenly over the first layer or oat mixture.<\/li>\n<li>Top with the remaining oat mix, pressing down evenly.<\/li>\n<li>Bake for 20 to 25 minutes until the top turns golden brown.<\/li>\n<li>Cool for a few minutes, then cut into 16 squares, remove from the tin and cool on a wire rack.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p><strong>These are just right for a tea break snack, and I&#8217;ll be making them again and again.
