It&#8217;s good enough to serve at a mid-week dinner party as a main course, with a chunky salad and some crusty bread on the side.<\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/www.pennygolightly.com\/\/wp-content\/uploads\/2012\/12\/mussel-chowder.jpg\"><img decoding=\"async\" class=\"size-medium wp-image-3009 aligncenter lazyload\" title=\"mussel chowder\" src=\"data:image\/gif;base64,R0lGODlhAQABAIAAAAAAAP\/\/\/yH5BAEAAAAALAAAAAABAAEAAAIBRAA7\" data-src=\"https:\/\/www.pennygolightly.com\/\/wp-content\/uploads\/2012\/12\/mussel-chowder-225x300.jpg\" alt=\"\" width=\"225\" height=\"300\" \/><noscript><img decoding=\"async\" class=\"size-medium wp-image-3009 aligncenter lazyload\" title=\"mussel chowder\" src=\"https:\/\/www.pennygolightly.com\/\/wp-content\/uploads\/2012\/12\/mussel-chowder-225x300.jpg\" alt=\"\" width=\"225\" height=\"300\" srcset=\"https:\/\/www.pennygolightly.com\/wp-content\/uploads\/2012\/12\/mussel-chowder-225x300.jpg 225w, https:\/\/www.pennygolightly.com\/wp-content\/uploads\/2012\/12\/mussel-chowder.jpg 725w\" sizes=\"(max-width: 225px) 100vw, 225px\" \/><\/noscript><\/a><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>1 tbsp olive oil<\/li>\n<li>1 onion, peeled &amp; chopped<\/li>\n<li>250g potatoes, peeled &amp; finely diced<\/li>\n<li>1 red pepper, de-seeded &amp; finely diced<\/li>\n<li>1kg fresh Scottish mussels, cleaned<!--more--><\/li>\n<li>800ml fish stock (made with 500ml water and 300ml milk + stock cube)<\/li>\n<li>2 tbsp cornflour<\/li>\n<li>2 tbsp fresh parsley, chopped<\/li>\n<\/ul>\n<p>1. Heat the olive oil in a large pan and gently fry the onion, potatoes and pepper for 5 minutes.<\/p>\n<p>2. Add the mussels and the fish stock, bring to the boil, cover and simmer for 5 minutes.<\/p>\n<p>3. Using a slotted spoon, remove the mussels from the pan and take them out of their shells. Discard all that remain unopened. Keep a few in their shells for a garnish and set aside.\u00a0Return the shelled mussels to the pan.<\/p>\n<p>4. Mix the cornflour with a little water to form a thin paste, and whisk into the pan, bringing the liquid back to the boil. Stir until the chowder thickens slightly.<\/p>\n<p>5.
